Grappa Infusions

At Kimpton's Pazzo Ristorante in Portland, Oregon, Executive Chef John Eisenhart brings his passion for seasonality out of the kitchen and into the bar. At the height of the growing season Eisenhart begins his grappa infusions - fig, cherries, strawberries, peaches - and by the time the holiday season rolls around, they're ready to serve as an after dinner digestif. During the holidays, this 250-seat restaurant is bustling with holiday parties and gatherings, and the grappas are a beautiful and interesting way to offer something new. This special in-house creation is not listed on the menu, so ask your server which seasonal grappas are available.
